Avalanche Cookies that will rule your world!

       Here we are! In just a couple days school is beginning, and lunchbox season is upon us! I don't know about you guys but sweets are the best part of my lunch! These no-bake avalanche cookies are super easy, customizable, delicious, and so quick to make!

       The first step is to combine 2 cups of crispy rice cereal, 1 cup of mini marshmallows (a heaping cup if you're like me), and 1 cup of lightly salted cocktail peanuts. At this point you can mix in whatever you want; M&Ms, sprinkles, chocolate chips, it really is endless. Mix those together, I use my hands because....just because, I have no excuse.




       I don't have a double broiler so I put a pot of water on the stove and let it get all hot and bubbly. Then I put a glass bowl over it with 1 lb of white chocolate (I just used a bag of white chocolate chips), and a 1/2 cup of peanut butter (I like the chunky kind in mine but you can totally add whichever you like). Once it's all nice and melty, pour it over your dry mixture and mix.






       After you get that all mixed together, get a cookie sheet (or Kookie sheet am I right?...no? Okay, let's move on) and drop by the tablespoonful.  Let them set up. Then refrain from eating the whole pan...I usually don't succeed, but it's worth it.
